I've been looking into this too and I think I might have found a really easy way to do it, when I get off work today I'll find some links and see if I can post up a "how-to" without having actually done it.

from what I've come across the vent covers can be removed without taking the dash apart, I'm still trying to find the teardown for you

if you've got access to the hmaservice.com site going through the BK repair section they call the dash a "Crash Pad". It doesn't show how to take the vents out (even though I'm pretty sure they just clip in and have foam grommets) it does have a tear down for the entire dash.. but from the looks of it.. its a lot of work, more than a saturday job.
I'll mess about in mine later and see if I can find a deffinate way to take the vents out without mucking around with the whole crash pad.

I'm talking on the phone to my dad right now. He suggested I go to the dealer and get an expanded view from the dealership since vents are common parts to be replaced and they can probably be replaced without taking it all apart.
We can hope ;)

It looks like the airvents come right out, which is great. Need to figure out where to run the wires though.

Once you get the vents out you should be able to see a small pathway down to the floor from each vent, the middle vents you might need to pull your center stack cover off. depending on how to mount the LEDs' you should be able to run the +12v lines down to your front accessory plug. Since your accessory plugs dont' run unless the key says to it won't stay on when your car is off. The low amp's the LED's draw shouldn't affect your plugs' abilities so you should be able to still use it for stuff like charging your phone and what not.
