I would love that too...I have to fold my mirrors in to park in my garage and its such a hassle. When its raining...double hassle.

well thats completely possible... just use two flush mount cameras right beside your back up sensors, then on either side of the gauges mount the respective video screen. A 4" monitor would do fine without being too obstructive. Two of these would work:
Pyle PLCM35 3.5" TFT LCD Monitor with nightvision back up camera kit

Yes, I have this type of rear facing camera set up on my motorhome.
What I'm not sure about is if it legal to use a camera in place of the mirrors.
I'd like to just get rid of the mirrors but not if them being gone is going to have me pulled over by LEO.

From what I've read on the internet, center mount Rear view mirrors & at least a driver side view mirror are required.
There are some camera's that are made to fit into the mirror housing but I would like to get rid of the mirror housings altogether.

Something else that would have to be contended with though would be doing something on the doors where the mirrors were mounted.
That would take a lot of work to clean up & make look good. Probably not worth the effort.

I have seen it done befor but it was a trailer queen so I am not sure about the legality of it. But it was a bad ass setup. There where 3" screens mounted inside each door but a tiny cam on the outside.
