What do they claim the fuel controller does, and why is it safe?

Do the cat deletes make a noticeable difference?

The fuel controller basically re-maps the fuel maps for better air/fuel ratio to get better performance. I've heard from someone who has it installed that the car runs a bit smoother but its not a significant power increase feel.

Also the cat deletes will make your exhaust a bit louder and throatier and perhaps give you a few HP like 3-5hp? Wouldn't be worth getting the cat deletes if you had already planned on getting a full catback exhaust which deletes the stock cats anyways.

I see a lot of people getting the RRM SRI. A buddy of mine keeps telling me to wait for a CAI. Is it worth the wait? More power is more power and cold air will always be cold air, right? SRI is louder? Thoughts?

The SRI is a sweet investment and these guys really did put some time into their product. The dyno showed something like what 6 whp? The CAI claim from AEM is something like 12-15 whp. The CAI is likely to be more expensive and will require you to re-locate the stock washer fluid resivoir but for the performance gains it could be well worth it. Also California seems like a good location for a CAI. Here in Florida the rain is ridiculous and we've got deep puddles everywhere which could damage your engine if any water got sucked up in that precious CAI.

I'd say just hold out for a bit and see what others say about the CAI when it comes out and if the reviews are good then go for it!
